Opencore 0.6.6 - cannot get past Apple logo during installation

Specs:

CPU - 10900k

Motherboard - Asrock Z490 Phantom Gaming ITX/TB3

RAM - Crucial 64GB

GPU - Sapphire Nitro+ 5700 XT

Hii everyone,

this is my first time trying to install OpenCore with Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina for the first time, but I'm having some issues. I cannot get past the Apple logo during the Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina installation stage, as the progress bar underneath gets slower and slower. Once it reaches 100%, it freezes, and nothing else happens.

I've read the Dortania guide, and my EFI is a modified version from SchmockLord's build (as I have the exact same PC build) guide here

OpenCore version: 0.6.6 with Success' href='/2020/12/install-macos-catalina-on-supported-pc.html'>Catalina 10.15.7 (19H15) installed to the USB 3.0 stick. I even went ahead and ran it on debug, and here is what happened to the bootlog: https://paste.c-net.org/ShavedGraphic

I'm not sure what I'm doing wrong, my config.plist should be configured properly (as it worked for SchmockLord's build) and I've double-checked with both the BIOS settings on my Z490 phantom gaming ITX motherboard, and also what specific kexts and drivers I needed.
