Using OpenCore 0.6.5 RELEASE, https://github.com/ljzxzxl/gigabyte-h470i-hackintosh-efi EFI, and some changes to the config.plist suggested by https://opencore.slowgeek.com/
I originally installed Catalina which seemed to be working well except for Bluetooth and WiFi so I used HoRNDIS-9.2.2. But on a whim I wiped the drive and installed Big Sur.
After I selected the drive to install it on it kept rebooting and didn't seem to install, but I kept selecting the Big Sur installer until the drive I installed it on appeared in the list. I went through the set up pages and to my surprise it automatically detected my WiFi network. I have not changed the WiFi bluetooth chip on the motherboard.
USB ports work. WiFi and Bluetooth work. I'm not sure what else to test, those are the main hardware things I would be using the most often. But I'm so happy it works!
