NUC Hackintosh question

Hi, I'd like to get myself a cheap Mac workstation for working in Logic. I was thinking of getting a 300$ NUC, and working around that, since there those are simple and typically known to play well. Although, i'm wondering if there's any way to get one working with Big Sur, have native wifi+bluetooth, and have full thunderbolt support? these are important to me since i have multiple monitors, and i'm planning on using bluetooth periferials.
