After searching for a Catalina/Big Sur Guide for my Elitebook 840 G7 I figured I might try it on my own and create my a EFI from Scratch. As I have never done this before I followed the Opencore Install Guide and managed to get most things up and running.
Currently I am running Big Sur 11.1 and OC 0.6.5
Currently working:
Keyboard incl. volume and brightness Function Keys (microphone mute doesn't give any reaction)
Speakers and integrated 3.5mm Combojack
USB-Ports but no mapping until now
"Thunderbolt"-Ports - they are marked as Thunderbolt on the case but I'm not sure if they are really working, will test that tomorrow as I don't have the Dock on hand right now.
USB-C Dock including all Ports - DP no 4k but I guess that has to do with Graphics Settings
Webcam
Shutdown, Reboot - until last week Shutdown was only possible without the USB-Dock connected, I don't know what exactly changed it but now it is working with the Dock connected too.
WIFI with Intel AX201NGW
not working:
Battery - I wasn't able to create a SSDT - tried with Rehabman's Guide
Integrated Microphone - one is shown in System Preferences but no reaction to sound (also it's a different controller than the Speaker, Speaker is a Realtek ALC285, Microphone is Intel Display Audio according to Windows Device Manager)
Touchpad is partially working - Gestures and "Swiping" are working but clicking results in weird actions - a different hackintosher told me it is probably due to the missing Batterypatching.
Physical Mousekeys and Trackpoint are also now working.
Fingerprint - not needed but would be really nice - I also didn't try to get it to work until now.
Sleep - probably also due to missing Batterypatching.
Bluetooth - Discovery is working but pairing is not working, maybe it is because of the missing USB-Mapping
