Finally got this working after many issues with Clover and finally tried OpenCore. I've been poking at this for the last few weeks here and there when I had a few mins to spare. OpenCore is a lot cleaner, but more work. I wound up using someone's EFI/kext from the tonymacx86 forums someone on this sub linked (I'll link if anyone is curious). It was a PITA to get proper USB drives (physically). I wound up ordering a few off Amazon because the old crusty ones I was using were from 1999 and way too slow. I wound up ordering a new m.2 ssd (500gb) while I was at it. The only problem I have is the NUC won't boot from the installed disk, only the USB drive. I guess I'll try copying the EFI to the installed disk tomorrow. Pretty darn excited that it's actually working.
Don't hurt me automod:
- CPU: Intel i5 (2017)
- GPU: Intel Iris something or other
- RAM: 32GB (2x 16GB)
- Motherboard/Laptop Make and Model: Intel...nuc?
- Audio Codec: Don't have speakers
- Ethernet Card: Intel something or other. Haven't checked this part yet
- Wifi/BT Card: Haven't worked on this yet
- Touchpad and touch display devices: None
- BIOS revision: Ohh...59+?
- Which of the guides on the sidebar you used: Failed with the RehabMan's guide, but got it to boot to a fuzzy tv screen. I used Dortania's OpenCore Install Guide with some linked EFIs/kexts from a dirty repo (just kidding, but they totally worked)

What's working, and what isn't working.
- NOT Working:
- Booting with the the USB - I guess I need to copy the efi folder to the root EFI on my installed disk?
- Bluetooth
- WiFi
- Sound I'm guessing
- Working:
- Booting from the OpenCore USB into my internal disk
- suspend/resume
- USBs
- NOT Working:
edit: a word
