Getting back into Hackintoshery - Issue with Ryzen 3900XT New Install Catalina

I recently upgraded my system to a Ryzen 9 3900XT and Gigabyte Aorus Elite Wifi X570 (from a 2600X and C6H) and decided I want to give Hackintosh another shot. I've done it before, but the last time I did any hackintoshing was with Clover and I didn't have good luck with my AMD system (last time I tried, there was no AMD Vanilla guide - it was all patched kernels that you had to run post-install before it would boot). With OpenCore popping up, and AMD Vanilla being a thing, I figured I'd give it another shot. OpenCore was/is very intimidating to me still compared to what I'm used to, but I managed to get to the point where I can boot the macOS install after successfully installing macOS using the USB installer. But, I'm running into an issue that I can't seem to figure out.

After running the USB installer and getting macOS installed (as in, the initial install booting from the USB drive, then the second half where it boots from the disk you're installing to), on the third boot where it would normally show you the initial setup of macOS it locks up shortly after booting. Initially I was installing to a USB HDD, and it would get past all the Verbose, and then freeze about halfway through the progress bar with the Apple logo. Trying again, this time installed to a USB NVMe enclosure, it boots fast enough to show me the actual setup, but it freezes shortly after, as I'm trying to select the country for example. It freezes completely, mouse does not move, no disk activity, and it never continues.

I've tried all of the "userspace issues" steps, such as "macOS frozen right before login", "Frozen in the macOS installer after 30 seconds", "Stuck on or near IOConsoleUsers: gIOScreenLock.../gIOLockState (3...", etc.

System specs are as follows. This is a primarily Windows system.

AMD Ryzen 9 3900XT

Gigabyte Aorus Elite X570 (WiFi)

ASUS ROG Strix Vega 56

2 x Inland Premium 1TB NVMe SSD (1 for Windows) 1 for games)

1 x WD Blue 1TB HDD

1 x WD Blue 2TB HDD

Installing to a USB NVMe SSD Enclosure. The SSD in it is a Samsung 960 Evo 250GB M.2 NVMe SSD. I'm waiting on a Samsung 860 Evo 1TB to come in the mail, and if I'm successful hackintoshing macOS will be installed on that.

Attempting to Hackintosh using:

macOS 10.15.7

OpenCore 0.6.2

I am thoroughly stumped, and being new to OpenCore isn't helping me at all. If anyone has a suggestion, I'd greatly appreciate it. I can post my EFI folder or tell you what all I have in my kexts, acpi, etc if necessary. I wasn't sure if attaching my EFI was allowed so I've omitted it from this post.
