Dual monitor (mini display / hdmi) mini display not working

So i have the skull canyon NUC and Big Sur working well, other than the onboard WiFi. I decided i need to connect a second monitor to it for work. I plugged in the mini display adapter to the second monitor but got just a blank screen and the monitor recycles between hdmi and the other mode. What’s weird is during boot, i see the Apple logo on both screens.

Does anyone know how to get video to output on both hdmi and min display port?
