"In Memory Panic Stackshot Succeeded" - Z390 Aorus Pro Wifi - Mac OS & Windows not working...

I followed hackintosher's guide to a T (including the specific z390 recommendations) to get Catalina working and successfully had my build running both Windows 10 (on SSD) and Mac OS Catalina (on m.2). It had worked reliably in either OS for a couple of months. Left for an extended road trip for a couple of weeks and come back and now I can't boot into either OS. The computer was on for a long time but was shut off at some point— wondering if being on for weeks or off for weeks caused this.

What else can I try to get this working? It was so dang stable before and now I'm stumped. Honestly a little scared that Windows 10 is also failing to boot.

Build:

  • z390 aorus pro wifi (note native wifi disabled)
  • i9-9900K
  • Sapphire Radeon Nitro+ RX 590
  • Ballistix Sport LT 64GB DDR4
  • Samsung 970 EVO SSD 500GB - M.2 (MacOS Catalina)
  • Samsung SSD 860 EVO 1TB - SSD (Windows 10)

BIOS Settings changed from default:

  • BIOS > Windows 8/10 Features > Other OS
  • BIOS > CSM Support > Disabled (Also check that secure boot is disabled)
  • Power > Erp > Disabled
  • Power > RC6 > Enabled
  • Peripherals > Initial Display Output > PCIe Slot 1 (or iGPU if you don't have descrete graphics)
  • Peripherals > Intel Platform Trust Techonology > Disabled
  • Peripherals > XHCI Hand-off > Enabled
  • Peripherals > USB Configuration > Legacy USB Support > Enabled
  • Chipset > Vt-d > Disabled
  • Chipset > Internal Graphics > Enabled
  • Chipset > Audio Controller > Enabled
  • Chipset > Above 4G Decoding > Enabled
  • Peripherals > Network Stack Configuration > Network Stack > Disabled

I tried re-flashing the BIOS but am still not able to boot in either OS. I also tried resetting the CMOS to get fresh NVRAM. No dice.

When I boot off the Mac OS drive, I get into the clover menu no problem. The first time I got a kernel panic that Thread 0 crashed. After re-flashing BIOS, got one boot up all the way through in verbose, then went to the regular MacOS apple bootup and got full bar and then froze there. Did another attempt, got kernel panic that says "** In Memory Panic Stackshot Succeeded ** Bytes Traced 35360 **". This kp repeats on all following attempts.

When I boot off the Windows 10 drive the BIOS froze (aorus spinner froze). On another attempt it ran "Preparing Automatic Repair" for like a second, then froze. Another attempt, it didn't run the automatic repair (just regular spinner) and briefly flashed that Windows blue before going black. Did not boot. Another attempt the "automatic repair" went through got a brief blue screen of death and then it automatically rebooted.

EDIT: I noticed that the CPU light on the mobo is red before I turn it on. It turns off (no error LEDs) once I turn the computer on. No codes that I can see.
