macOS installer crashes after first reboot - OpenCore 0.5.9 - Catalina 10.15.5

Hey guys,

This is my first Hackintosh and I'm getting stuck after the installer reboots my computer for the first time. All is working fine until the installer is almost complete, then it reboots and takes me to the Crash Log Viewer.

Hardware
CPU: i7-9700k
GPU: MSI Radeon RX 5700 XT Gaming X 8GB
RAM: G.Skill Trident Z RGB 32GB (2x16GB) 3200MHz CL16 DDR4
MOTHERBOARD: ASUS Prime Z390-A Motherboard
SSD: Western Digital Black SN750 NVMe M.2 SSD 500GB

Steps taken prior to the installer crashing:

1. Successfully loads macOS utilities
2. Successfully format SSD to APFS/GUID Partition Map
3. Begin installation
4. Progress bar progresses for around 15 minutes. When there's roughly 2-3 minutes left, computer reboots
5. macOS symbol and progress bar appears again for a short amount of time
6. Crash log viewer appears saying installation failed

What guide/tool I followed:
- I'm following the offical OpenCore Desktop Guide here.
- OpenCore 0.5.9 DEBUG
- 10.15.5 macOS Catalina
- All available UEFI settings have been disabled/enabled as per the OpenCore guide

Other notes:
- The only things plugged into my computer during installation is the keyboard and ethernet cable

Any help would be greatly appreciated. Even just helping me find which error in the installer log is causing the crash and I can try troubleshoot from there.
