Bluetooth lag/chop when CPU utilization spikes up

I've tried 3 different cards now but they all have some kind of weird issue where as soon as the cpu spikes up, the BT signal chops out. I've done a lot of searching around for solutions but can't nail it down yet.

I use a BT keyboard and mouse, and they do lag when the cpu spikes but they don't disconnect like the airpods. When the airpods have issues they are completely hosed until I disconnect and reconnect them.

I'm running Catalina, with an i7 9700k. I have WiFi disabled on the card and run etherent but still have the Bluetooth lag issues.

I've confirmed the dropping with the xcode Bluetooth tool that lets you check signal strength. As soon as cpu load spikes up it chops out everything on the Bluetooth connection.

I've also mapped my USB ports. The header for the BT card is set to internal.

The thing is I don't have these issues with my MacBook pro. Could it be the wrong smbios? I followed this guide for my build: https://dortania.github.io/OpenCore-Desktop-Guide/
