Best solution for my set up? Seperate HDD w/ BIOS to choose boot

Last night I decided to finally dualboot Hackintosh on my Workstation PC running Windows 10 currently, and did some googling & youtube watching (lol). I was trying to find out which latest version of MacOS is suitable for my PC, and i found out it was High Sierra. But I'll be honest with you, this morning I was trying to find that same source that told me High Sierra was my best, I could not find it (Still looking through my Chrome History) I think I was searching for the most suitable version for my GTX 1070...

But anyways, I am asking for advice, what is the best solution for my situation:

  1. Installing Hackintosh on my extra & seperate 2.5 500GB WD Blue (Just playing with it, till i see full functionality of a Hackintosh, then I will consider installing it on a new SSD)
  2. Would like to let my BIOS handle the OS Boots (Choosing Boot from my Windows SSD or 2.5' Hackintosh HDD) - Opencore or Clover? Will that upset respective Windows & MacOS bootloaders? From what I see, no, because each SDD & HDD has their own bootloaders. Maybe system updates will? Can someone enlighten?
  3. What is the latest version of MacOS best suited for my hardware? - Im looking for least maintenance and I think I settled for High Sierra because of my Pascal GPU (?) Im tying to remember what was my thinking process last night 😅.
  4. I have a 3rd shared drive (already in use, with data) that I would like to have shared in between my Windows 10 and Hackintosh. - Messy "_MACOSX" folders managable?

  • RAM: Patriot Memory DDR4-2132 (1066MHz) 8GB + 8GB (16GB)
  • Motherboard/Laptop model: ASRock B150M Pro 4 (Skylake)
  • Audio Codec: Onboard Realtek ALC892 Audio Codec
  • Ethernet Card: (Unsure) Onboard Intel 82545GM Gigabit Ethernet Controller
  • Wifi/BT Card: Not Available
