RE-SETUP MAC OS BOOT DRIVE NOT WORKING

So I'm trying to re-setup my Hackintosh boot drive after a fatal crash (previously posted about that on this sub, and was able to resolve/recover most of all my data). When I originally set up the desktop, I used UniBeast, MultiBeast, and Clover to install the High Sierra OS onto my internal SSD via a USB stick. When I try and go through the same exact process now, I keep running into different errors which I cannot find a way to resolve. I have tried using three different computers, all running on different versions of the Mac OS (Sierra, High Sierra, and Catalina). Of those three, the only one that I understand why it won't work is Catalina, because the High Sierra OS is too old to be opened on that system. Ideally, I would like to install High Sierra again since I have programs/saved files that might not work with the newer operating systems.

Does anyone know why UniBeast is not working for me when trying to create my Boot USB Stick? Any suggestions of other programs or sites I could use to figure out how to re-set my system? Literally any advice is appreciat4ed, because I have been trying to figure this issue out for a few weeks now to no avail.
