Z390 & i9-9900K with OpenCore or Clover - first timer

I have a powerful custom PC that I'd like to convert into a Hackintosh. I recently installed a second Samsung NVMe card so that I can leave my primary storage alone with Windows 10 installed, in case I run into real problems in Hackintosh land.

This will be my first Hackintosh. I watched SnazzyLabs video where he strongly recommends OpenCore over Clover, stating that it's the future, faster boot times, SIP support, etc. So I planned on going with OpenCore, but the more I read I keep seeing that if you're new to all this, stick with Clover. Additionally, it seems like there's not a lot of success with OpenCore and Z390 boards.

So before i get started I wanted to this community your opinion on the matter.

Gigabyte Z390 Xtreme
i9-9900K
64GB HyperX Predator Black 3200MHz DDR4 memory
Samsung 970 Pro 1TB NVMe
Samsung 970 Pro 512GB NVMe (recently added for macOS)
AMD Radeon VII & Nvidia 1080 Ti Hybrid (both installed and running, so I can use Octane in Windows 10. it works now in Windows but I wonder if it'll break macOS having that Nvidia in there)
Corsair AX1600i 80+ Titanium power supply
Noctua NH-D15 cooler
Phanteks Enthoo Evolv X ATX Case
