Following Vanilla guide for Clover and got Catalina 10.15.3 working with bluetooth, Sound, USB, Ethernet etc... I bought the hardware that was the most compatible as possible, appart from the NVME Samsung SSD. But fortunately, I had no issue at all with it as soon as I injected the FixNVME kext. I tried couple of times with OpenCore but could not go further than the Boot Options menu. Found several different forum saying the Gigabyte Z390 M Gaming might have issues with OpenCore and when I tried with Clover, it worked on first try.
