So I did a totally stupid thing. Downloaded and ran Clover Configurator (https://github.com/Dids/clover-builder/releases) on my MBP thinking that was what I should do.
I have yet to reboot my MBP. My EFI is mounted in Finder, and shows a folder /EFI/CLOVER/
My Clover install log reads as follows:
