Running Catalina using iGPU

Hey yall, I have a GTX 1080 GPU which obviously is not compatible with Mojave or Catalina.. I've been able to successfully get High Sierra up and running. I don't really use it since my other build has Catalina which is way more useful for me. I'd like to start fresh on this build by installing Catalina. My question is, is it possible for me to install Catalina and make it use my iGPU but with my monitors plugged into the GTX GPU? I would like to make it dual-boot with OSX and Windows 10, which is why I need to keep my 1080. Or could I also add a ATI GPU, make OSX use that, and keep my monitors plugged into the 1080 for windows? Is any of this at all possible? Is there any better solutions? Will Unraid do me any good? I'm using windows mostly for gaming, and I'd like to use OSX for everything else. Thanks in advance!
