Opencore Catalina Hackintosh - SSDT AND DSDT Files? AND Config.plist?

So I would like to do a Vanilla OSX install. (Currently have Olarila working but my native Fenvi-T919 card does not work!)

Downloaded Catalina 10.15.2 and made my installer usb.

Placed OpenCore folder into the EFI of that installer usb.

I'm following the AMD Vanilla Install guide. I've loaded my kexts and drivers folders on Opencore.

I just do not know what to put in my ACPI folder. (SSDT? Which ones?)

And how exactly to configure my Config.plist file? I do not see any info on this for AMD/Ryzen processors.

Specs:

Mobo: Gigabyte Aorus X570 Pro Wifi

CPU: Ryzen R9 3900x

GPU: Sapphire Nitro+ Radeon Vega 64

Wifi Card: Fenvi FV-T919

(edit: I noticed there are AcpiSamples folder in the "docs" folder of the OpenCore GitHub download. However they all end in ".dsl" and the tutorial they are all ".aml") Also I don't know what I'm editing in those exactly.
