Catalina fresh install, installer crashes when I select disk to use

8700K, Samsung 970 Pro on a Maximus X Hero

Clover boots, format my disk (tried APFS and MacOS Extended), both show up in the installer as valid targets for my MacOS installation (10.15.2), but when I select the disk and chooses next, Installer crashes me back to the MacOS menu (disk util, installer, etc.)
