7 Hours Install Time On Catalina Ryzentosh?

So I'm not exactly new to Hackintoshing, but this is the first time I've been close to a fully useable build. I recently saw the video from SnazzyLabs about his new Ryzentosh (this one) and thought I should give it a try. I figured his build was almost the same as mine, so I should be able to follow the video and have no issues, right? Oh boy was I wrong.

For starters, I pretty much had to go down the list on OpenCore's troubleshooting page because everything that could have gone wrong has gone wrong. After applying all the fixes and editing my config.plist, I got it to boot! Ethernet kext seemed to work Perfectly and I was getting the speed I usually get. But when I went to install, it said it would take 7ish hours to install! So I left it for a bit, and no change. It had made progress, but there was still 6 hours remaining. I'm pretty much at a loss at this point. I have tried different Ethernet cables, different USB ports, and different flash drives; and still no change.

Here's my specs: CPU: AMD Ryzen 5 2600 Mobo: Gigabyte B450M DS3H RAM: Corsair Vengeance 16GB 3200MHz GPU: XFX Radeon RX 5700XT RAW ii Install Drive: 120GB PNY SSD

I am using OpenCore to boot and trying to install 10.15.2. Any help would be greatly appreciated!

TL;DR: I am trying to install Catalina with OpenCore and it says it will take 7 hours to install and seems to be taking that long.
