SMBios not reflected in About This Mac?

I recently upgraded to a 3700x. I have a great install working on 10.15.1 with the following hardware:

Ryzen 3700x @ 4.3ghz

16gb DDR4

AsRock B450 Pro

5700XT 8GB

I had iMacPro 14,2 as my SMbios with my previous R5 2600, and it seemed like either iMacPro1,1 or iMacPro19,1 would be a better fit (8 Core i9, up to 8gb VRam, seems to match my build in basic spec). However, the computer crashes on boot with an iMacPro1,1 setting.

The iMac19,1 works and is applied, however I still see iMac 27", Late 2013 in 'About This Mac'. It also labels my processor as an 8 core i5? (lol)

I use OpenCore and changed the SMbios in the Config file, is this all that needs to be done? Is there a reason iMacPro1,1 doesn't work, or why the iMac19,1 didn't seem to change the description...or am I missing something?

Most importantly, are there any performance / reliability improvements by selecting the "most ideal" SM Bios? I do a lot of video editing/encoding on this machine and would like both of those things!
