i7, i5, or Ryzen as starting point

My Mid-2011 Mac Mini, and ASRock a75m-itx fueled Plex server are getting a bit long in the tooth. Thinking about buying a used PC from a local seller and using that to spawn a new hackintosh that will serve all of these needs.

Sturdy build for work, video conferencing, some light video edits. Plex server. Space to build, develop, play.

My question is around which box would be the best starting point. I've read mixed messages about some of the components and building a hackintosh. Would love input.

Specifically, I've got my eyes on the following three:

- i7 970, EVGA X58 SLI motherboard, Red Devil RX590

- i5 2500K, Sabertooth P67 motherboard, GeForce GTX 770

- Ryzen 5 1500, MSI B450 gaming plus motherboard, Zotac GTX 1060

I figure all have strengths and weaknesses. I've seen evidence of all being used in a hackintosh build. I'm planning on adding/upgrading over time...but trying to identify a good starting point for this next project. Thanks in advance.
