How to properly split drives for hackintosh dual boot?

Hi everyone! In the near future I am going to buy a laptop and want to make hackintosh dual boot. The laptop has two slots for the drive and I ask you for advice on how to properly split drives for 2 systems without creating "file chaos".

In general, I need a Mac OS for a couple of programs that are not on Windows. My idea is to have a disk for files that can be read on both systems, and in the meantime, it will be possible to install programs, games on Windows in same disk. Therefore, I think to buy 2 SSD -120GB and 480GB. 120GB for Mac OS system and programs, 480GB for Windows, which I will divide by 100GB for the system and 380GB for programms and files (that can be used on Mac OS).

What do you think? Maybe I'm wrong about something? Is 120GB enough for the system and a couple of programs or I should to buy 250GB? Because I read that "System" section is using lots of disk space on Mojave and you often should to clean it with utilities or reinstall the system at all again.
