Killed EFI, restore (three options)

Greetings hackmac friends,

let's say that there is something wrong with the system/OS EFI partition and I want to restore my boot partition (250GB SSD)

a) by migrating. My future attempt will be (because it's time to expand anyway) plugging in a new SSD (500GB M.2), installing same macOS (thus installing a fresh EFI), and either use the Migration Assistant or Carbon Copy Cloner and copy/restore the data from the 250GB SSD.

b) by restoring the config file. Same procedure except the Migration and CCC, instead looking at restoring the EFI via copying all the files from the 500GB EFI to the 250GB EFI, thus replacing them).

c) by figuring out what is wrong with the 250GB EFI while booted into the 500GB. I probably won't do that since I do not know what I am looking for.

In first two cases I'd have to reconfigure the config file anew. in a) I do not touch the EFI but the data, in b) I do not touch the data but the EFI content. I'll copy the content from the old config file to save myself the time though (unless you say it will cause the new OS not to boot).

What's your take on the option a) vs b) and are there any flaws so far? Thanks in advance!

(optional information): background to the baseline / initial problem: I forced formatted of one of my SSDs that just contained data (disk utility just did not want to unmount it) via third application (cant remember which now). It worked and MacOS rebooted as usual. But later, MacOS apparently misinterpreted this action as something to do with the system partition and now I can't boot. As I remember, my conclusion was (it's over two month back) that something went wrong with the system-EFI.
