High Sierra Installer Loop on 2nd Round Installation

I just picked up a PC with the following in it:

i7-8700T
EVGA H370
16gb DDR4 (2x8)
1TB Samsung NVME
ASUS 1060 6GB

So after I created my USB Installer (following this guide roughly https://www.tonymacx86.com/threads/success-asrock-h370-pro4-high-sierra-10-13-5-core-i7-8700k-cofee-lake.257250/), popped it into a USB 2.0 Port, and booted into the installer. Formatted my NVME, then started the installer. After the first round (the one that takes 5-mins or so) the machine reboots, clover pops up and I click the target drive to boot. It loads into the installer and says "18 minutes remaining" and within a minute turns off and starts over again.

I've been racking my brain trying to figure this out, any help would be greatly appreciated!
