How to reorganize drive structure in dual boot laptop Hack?

I've recently got a dual boot Mac/Windows setup working and now need to do some drive reorganization and I'm not quite sure how to do it. I'm not well versed with Windows at all, so I'm struggling a bit here.

Currently I have a 256gb m.2 SSD drive with Mojave on it. To install Windows 10 I used the original 7200rpm 1TB drive from my MSI GL72M 7RDX. And I have a 1TB SSHD that I'd been using for various Hackintosh backup partitions that I want to get back into my laptop, as it's currently in a USB 3 enclosure.

Now I'm trying to figure out how I'm going to get this all to mesh together. I want the m.2 drive just on it's own, and not partitioned. The problem I'm running into is how do I get Windows and my backup partitions functioning on the same drive? The first thing I did was clone the functioning Win10 install to the SSHD, but that wouldn't boot properly through Clover. Do I need to clone the recovery and EFI partitions too to get Windows to actually boot properly? Or should I be looking at this another way and backing up the SSHD and doing a fresh install of Windows on it? I've tried creating new partitions on the Win10 side, then formatting them in Mojave, but that just resulted in an Disk Utility error.

Is there some type of best practice for this? Ideally I just like having a reliable fallback macOS install on my machine and I won't always have the USB 3 enclosure with me when I'm away from home.
