How much upkeep and maintenance is there with a Hackintosh

I've been really looking into a Hackintosh for video editing. I have a 2016 Macbook Pro that still works well if I convert all my video footage to proxy. I'm looking for something with a bit more power to compliment my Macbook.

I don't mind the initial sweat equity put into the initial build and setup of a Hackintosh but I'm just concerned about constant updates, patches, hacks etc. If I have an edit deadline, I can't afford to spend time troubleshooting a sound issue caused by an update. But I'd still have my Macbook Pro as a backup. Is a hackintosh pretty easy to maintain after the initial setup?
