Have limited space. Want to test out before I get a new SSD. What's the minimum requirement to install the latest Mac OS?

I have a PC with 1TB HDD and 125GB SSD. I have my windows install on the SSD and have around 40GB free space. I have no real reason to switch to Mac OS and just want to try it out as a hobby. Maybe get it to work with iPhone. Before I commit to a new SSD, I want to check if it's worth it. Can I shrink and create a 35GB partition of my windows SSD drive and install?

I have never tried Hackintosh before. Here are my specs

Motherboard - Intel DH67BL Core i7 2600k GTX 1060 3GB Adata 125GB SSD WD 1TB 5400RPM HDD

Should I expect any issues?
