Replace 2008 Mac Pro with Hackintosh?

How can I replicate my Mac Pro (3,1) setup, but make a few upgrades?

2x 3ghz quad core xeon

32 gb ram

4 storage drives. HDD and SSD

1 Optical drive

ATI Radeon HD 2600 XT 256MB

Dead quiet - super important!

I'm using 2 of my 3 available pcie cards, and the last one is about to be filled by a pcie usb 3.0 card. I really just need more pcie slots and wouldn't mind using some newer hardware, but I don't feel the need to go full boar and drop like $1k+ on a gaming beast with power I don't need.
