Is the difference between SATA and PCI-E (M2) SSDs noticeable in a hackintosh/on Mojave, or generally worth upgrading from one to the other?

I have two of these SSDs that have served me very well, one for windows, one for MacOS, and wondering if it's worth dropping the $250 or so it would take to replace them with their PCI counterparts in a new build.

My use cases are largely mild video/music editing, and some light gaming on the windows drive.
