I've hit a complete brick wall, what to do?

So My specs are as follows

Laptop

Asus ROG GL503VS-DH74

Intel Core i7 7700HQ

nVidia GTX1070

250GB nVME SSD

1TB Hybrid HDD

16GB Memory

I have hit a brick wall, I can boot into the Mojave installer with absolutely no problems, but I can't see my 1TB hard drive, I can see my nVME drive fine but the HDD is my target I want to use to install macOS on. I have tried converting it to GPT in windows prior to booting the installer, I have tried AHCI mode, I've disable virtualization, I have tried to use the vanilla installer with just a clover UEFI bootloader and still can't see it. Someone help please :(.
