Accidental Update to High Sierra

Hello folks,

I recently built a couple of Hackintoshs for an older couple that I'm friends with. They are running Sierra on an i3-7100 using Intel gfx on a Gigabyte H270n WiFi board with a Samsung SSD. The computers were both running perfectly fine, having followed portions of this guide and using the kexts recommended there too.

However, the wife accidentally updated her computer to High Sierra and her computer evidently will not boot. As I understand it, it is not necessarily hard to fix the update and run HS but the computers are currently located a couple states away since this couple prefers to live elsewhere during the winter.

What do you guys recommend as the simplest way to fix this, either by backdating or updating or whatever, since I cannot access the broken computer on site or through remote? I am relatively new to Hackintosh but solidly tech capable. I may have some aid through a visiting relative that is techy to some degree and can act as onsite.
