Yet Another AMD vs NVIDIA GPU Question

I plan to build a computer to double boot in the coming months. I have most of the parts locked down but I'm unsure what GPU to order. I hear Nvidia may perform better for gaming (which I'm more likely to be doing than tasks like video editing, but it will have a mixed workload) on the windows partition but macOS is less obvious to me.

I've seen some sources showing that in applications like FinalCut AMD GPUs can outperform Nvidia since the Pascal web drivers are poorly optimized for macOS, but people on many forums still seem to prefer Nvidia. With mixed information it makes it hard to understand which would be better.

Finally much of the information already out there seems to consider older sets of GPUs and I wonder if the Vega 56/64 will become much better when the iMac Pro is released in December using them with native support (I'm not planning to be building for a little while anyways).

So which GPU line is likely to offer better performance?

To give a little more context on my system I'll have: i5-8600K (I'm aware that coffee lake isn't fully supported yet) Gigabyte Gaming 7 Z370 4×8gb 3000mhz RAM And I'm planning to get a GPU in the range of gtx 1070 ti / 1080 or vega 56 / 64
