Blocking MacOS's access to additional hard drives

Hello, I have an i7-4770K system on an Asus Z97-A motherboard with an AMD Radeon R9 290X graphics card.

My system has three internal drives, the system SSD and two hard drives arranged as RAID0, all NTFS. I'm looking to install MacOS on an additional SSD drive while keeping my current system setup on the drives I have installed. As far as I'm aware, my system is Hackintosh-compatible, and I do have Mac computers to get a copy of the OS from, but it is critical that MacOS does not have access to either of my hard drives, as they are controlled by software RAID by Windows 10 and MacOS would almost certainly corrupt the drives, leading to data loss. I suppose it would be good to prevent MacOS from accessing my primary SSD, too.

How can I ensure that MacOS does not have access to the other drives connected to my motherboard, especially the hard drives? I do want to use both operating systems, but I'm not willing to plug and unplug cables every time I want to reboot into another one. If it is not possible to contain MacOS I'm afraid I will not be able to safely proceed with making a Hackintosh.
