Can I install Hackintosh to my spare, empty SSD and keep Windows on another drive?

Hey everyone, I just started thinking about experimenting with Hackintosh to see if Final Cut Pro X is worth all the hype, and just see how the system works.

I use Windows 10 and I have the system on an SSD, and I have two HDs with files. I have a spare SSD that I'm not using.

Can I disconnect all other drives, install Hackintosh on that SSD, reconnect the other drives and use the two systems independently, selecting the boot drive in the BIOS everytime I want to switch?
