Just how stable are hackintoshes?

I'm going to be moving shortly and for the first time in my life, I won't have easy access to a Mac. I've had apple computers since I was a little kid (parents worked at an apple retailer since the 90s.)

Because of this, I've come to really love OS X. I'm not in love with apple's business plan or the computers they're currently producing (I mean, the keyboards on the most recent laptops are... truly awful to to mention cooling of pretty much any of their computers.)

So I'm faced with a decision. Buy a mac mini or build a hackintosh. Here's the deal though. One of the caveats for me having a mac is stability. Ease of updates, no worrying about viruses or failures (besides the stupid hybrid drive that seems to fail every few years.)

I like macs because of the console (bash >>>> windows command line) and because of their scriptability. I've been using applescript since it came out. Not to mention programming in general on macs seems to be very easy.

I've done Linux. The reason I don't like it is the annoyance of updates. Update the computer and suddenly your version of chromium doesn't work, your wifi doesn't work, and your fileserver got screwed up. Since I'm not a Linux expert, I'd then spend 5 hours trying to fix those things. That annoys me.

So my question is this. How stable are hackintoshes? Are they as stable and forgettable as normal Macintoshes are?
