Most default fonts don't show up in Pages, Numbers etc

I can see many awesome fonts in the fontbook, but when I open Pages, I see only a few boring stupid fonts. How can I get other fonts to work with Pages, Numbers etc

This reddit may not meant for this type of question, but since everyone here uses macOS, I thought I can get help here.
